Pumpkin Puree!

This morning began the journey to an all day pumpkin puree fair!  So this morning as Elle and I were deciding what we were going to do today, I decided today was the day we would get rid of one of those pumpkins outside.  For those of you who haven't done this before, you should.  It's really good, saves a little money and easy.

So first, everyone will say use a sweet pumpkin or small one, but I had one big jack-o-lantern one.  I have used them before and no big deal.  If you like them sweeter, than just add sugar. :)  First I wiped the outside of the pumpkin, then I cut it in quarters.  Then I put foil in a pan with sides, and put the pumpkin with skin side out.  If that makes sense.  I could only put half the pumpkin in at a time because it was so big.  The oven was at 375 degrees for about an hour or so.  You just time it so your pumpkin skin is a little brown and the pulp is soft.  Once done, I peel off the skin, and there is your pulp.

Puree this in the blender or food processor and use the juices from the pan to help smooth it out.  Then poor it into a strainer and let it sit for a while.  This will help the water drain out.  There you have it.

It was kind of crazy doing this all day and going from this to other stuff in the house.  I planned it so that I could bake and fold clothes, or let it strain and hang out with the kids.  So when I say all day, I really don't mean as in my full attention.  Now all that is left to do is put small amounts into freezer bags, but I didn't have any, so this step will need to wait.  I am hoping to make some delicious foods with this puree, so stay tuned.
